Stuffed Acorn Squash. Packed with anti-oxidants, flavor and comfort without the sluggish feeling of rice, bread and potatoes.
Stuffed Acorn Squash
Ingredients
1 Acorn Squash
2 TBSP. Olive Oil
1 can Garbanzo Beans
1 c. cooked Quinoa and Brown Rice
Pinch of ground Flax Seed
1/4c.Green Onions
¼ cup chopped walnuts
grilled zucchini, mushrooms, eggplant mixture
Directions
Preheat to 375°F and line a baking sheets with parchment paper.
Cut Acorn Squash in half and scoop out seeds (set seeds aside for later)
Add Olive Oil to edges of each Acorn Squash
Lay Acorn Squash face down on parchment paper.
Bake for 30 minutes
In the meantime mix garbanzo beans quinoa and brown rice, green onions, calabasa, mushrooms, eggplant and walnuts. Season to taste.
Once Acorn Squash is done, put each half in separate bowls. Spoon in mixture. Sprinkle with ground flax seed. Enjoy!
